Beef shank
For each pound of meat
* Soy Sauce (老抽) - 2 TBS
* Salt - 1/2 tsp
* Sugar - 3 TBS
* Cooking wine - 2 TBS
* Curry powder - 2 TBS
* Chili powder - 2 TBS (or less depends on how spicy you prefer)
* Citrus powder (陈皮粉) - 2 TBS
* Citrus powder (陈皮粉) - 2 TBS
Steps
1. Cut beef shank in halves and blanching in boiling water.
